Our signature house made banana bread is gluten free, low GI, refined sugar free and filled with super tasty Australian bananas and fragrant spices. 

DRY INGREDIENTS 
1 cup buckwheat flour 
1/2 cup almond meal 
1/2 cup coconut flour 
1 tsp baking powder 
3 tsp cinnamon 
1 tsp ground ginger 
1/2 tsp all spice 
1/2 tsp cardamom
1/2 tsp nutmeg 
1 tsp salt 

WET INGREDIENTS 
4 eggs 
1/2 cup coconut oil (melted)
1/2 cup almond milk 
2 tsp apple cider vinegar 
6 ripe bananas mashed (+1 extra banana for topping) 
1/3 cup coconut sugar 
2 tsp vanilla extract 

METHOD:
Preheat oven to 180 degrees
Grease and line loaf tin *
Mix eggs and coconut sugar together in large mixing bowl 
Add all other wet ingredients 
Add dry ingredients one at a time 
Pour mixture into load tin 
Top with extra banana (cut in half length ways and place on top)
Bake for 1 hour or until skewer comes out clean 

*this recipe can also be used for muffins – just use a standard muffin tin – makes approx. 12 

Great fresh or toasted with butter/ricotta/honey/strawberries
